Chilled Cucumber Avocado Soup

Ingredients:

  • 2 large cucumbers, peeled and chopped
  • 1 ripe avocado
  • 1/2 cup Greek yogurt
  • 1/4 cup fresh mint leaves
  • 2 tablespoons lime juice
  • Salt and pepper to taste

Instructions: Blend all ingredients until smooth. Chill for at least 2 hours before serving. Garnish with a drizzle of olive oil and a sprinkle of mint (omit if unable to tolerate).
